Mexican cheese is good stuff. Panela is a simple fresh cheese; it squeaks when you chew it. Asadero is more mature, and tastes kinda like mozzarella. Oaxaca cheese is basically a goat's-milk string cheese, and Chihuahua is kinda like Parmesan. Don't be afraid of the cheese, the cheese is your friend. Melted Asadero and panela with pan-fried chorizo: scoop up in tortillas and you've got a party! Now, you got some crab cake recipes for a poor land-locked, crab-deprived Midwesterner?
